Lebanese Rice with Chicken
Lebanese Rice with Chicken is a fantastic choice for several reasons. First, it’s a one-pot meal that’s easy to prepare and even easier to clean up afterward.
Second, it’s packed with flavor and nutrients, thanks to the combination of spices and fresh ingredients. Most importantly, my teenagers love it!

The Recipe: Lebanese Rice with Chicken
Here’s how to make this easy and flavorful dish that your family will love.
Ingredients
For the Chicken:
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 bay leaf
- 2 cardamom pods
- 3 cloves
- 1 cinnamon stick
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- Salt, to taste
- 7 spices (available at most grocery stores or make your own blend)
For the Rice:
- 2 cups long grain rice, rinsed
- Chicken stock (from cooking the chicken)
For the Salad (on the side):
- Lettuce, chopped
- Cucumber, diced
- Green onions, chopped
- Cherry tomatoes, halved
- Optional: Tzatziki sauce for added flavor

Prepare the Chicken
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and fry until both sides are browned.

Add Spices and Vegetables
Once the chicken is browned, add the bay leaf, cardamom, cloves, cinnamon stick, chopped onion, celery, and carrots. Season with salt and add the 7 spices so that the chicken absorbs all the wonderful flavors.

Cook the Chicken
Pour in enough water to cover the chicken. Bring it to a boil, then reduce the heat to low and let it simmer for one hour and a half. After cooking, remove the chicken and strain the broth.

Prepare the Rice
Rinse the long-grain rice under cold water until the water runs clear. Soak the rice for at least 30 minutes. For every cup of rice, use 2 cups of the chicken stock you prepared.

Cook the Rice
In a separate pot, combine the soaked rice and the chicken stock. Bring to a boil, then reduce heat, cover, and let it simmer until the rice is cooked and fluffy.

Serve
Fluff the rice with a fork and serve it alongside the chicken. For a refreshing side, toss together lettuce, cucumber, green onions, and cherry tomatoes. Add tzatziki if you desire extra zing!
